Kachumbari is an African tomato, pepper and onion salad dish that is very easy to prepare. Usually, Kachumbari is served as a side dish to a main course or used as a dip for vegetables. Therefore, this recipe is a good dish to make the next barbecue unforgettable.



Ingredients you need:

  • 6 ripe tomatoes
  • 2 red (or green) peppers
  • 2 onions
  • 3 cloves of garlic
  • a hand full of coriander and thyme
  • 1 tbsp. olive oil
  • squeezed lemon or lime juice


That’s how you you do it:

  1. First, chop the tomatoes, onions and peppers. Drizzle the chopped vegetables with extra virgin olive oil.
  2. If you like it “crunchy”: Roast in oven at 180ºC for 20 minutes.
  3. Then, mix the tomatoes, onions and peppers with the coriander and thyme into a bowl. Add the lemon or lime juice.
  4. Add some pepper and salt
  5. It’s now ready to serve!
