Autumn is here! Today marks the beginning of autumn in Germany, which means colorful leaves, hot chestnuts and pumpkins!

What’s better fitting than a Kenyan pumpkin dessert from Mombasa for our recipe of the week?

 

Ingredients

1 medium sized hokkaido pumpkin (approx. 1,5 kg)
400 g of sugar
250 ml coconut milk
1 tsp of cardamom

 

 

Preparation

Required time: 25 minutes

Level of difficulty: easy

For 4 Persons

First remove the stones and cut the pumpkin into cubes. Then steam it, to make it easier pealing the skin off.

After that put the pumpkin cubes and the sugar in a pot and heat it up to low to medium heat. Stir until both of the ingredients are mixed together. Put in the coconut milk and the cardomom as well and stir until a pudding-like consistancy is achieved.

And it’s ready to be served! If you like it sweeter just add more sugar to it.
